Our cacao is single-origin, from small family farms in the coastal tropical desert of Northern Peru, one of the rarest cacao-growing microclimates on earth. It's a wild-grown, heirloom white-bean variety with a naturally bright, fruity flavor, and every purchase helps keep this rare growing tradition alive.

How We Test Our Cacao

Our cacao ingredients are tested lot by lot for heavy metals, so what's on the label reflects what's in your cup. Farming and Processing

Ceremonial Cacao vs. Cocoa Powder

They start as the same bean, but they're very different products. Ceremonial cacao is the whole bean: hand-harvested, sun-dried, and stone-ground into a paste with its natural cacao butter intact, where much of the flavor lives. Cocoa powder is made by pressing most of that cacao butter out, leaving a dry, defatted powder built for baking.

Research published in the Journal of Agricultural and Food Chemistry found that alkalizing (“Dutch processing”) cocoa can reduce its natural flavanol antioxidants by roughly 60–90%, depending on how heavily it’s processed.
